Blueberry Crisp Recipe

Yummy!!!
In case you have some frozen blueberries in the freezer
you need to use like I did...
Here's a great blueberry recipe!!!

6 cups (3 pint) blueberries
1/2 cup sugar
1 Tablespoon cornstarch
1 teaspoon fresh lemon juice (I didn't use)
1/4 teaspoon salt

For the topping...
3/4 cup flour
1/2 cup rolled oats
1/2 teaspoon baking powder
1/2 teaspoon salt
3 oz. (6 Tablespoons) butter, softened
1/3 cup sugar
I doubled the topping for the 9x13 and next time I will triple...

--Preheat oven to 375 degrees
Make the filling -- mix blueberries, sugar, cornstarch, lemon juice, and salt in a bowl. Put it in a 8" baking dish. (I used a 9x13 and it worked great)
-- Make the topping -- Stir together flour, oats, baking powder, and salt. Cream butter and sugar in a mixer until pale and fluffy. Stir dry ingred. into butter. Using your hands, squeeze topping pieces together into clumps.
-- Sprinkle topping evenly over filling. Bake until bubbling in center and
brown on top, about 1 hour.
-- Transfer to a wire rack, and let cool

  1. Yummy! I have frozen blueberries still in the freezer and all ingred. on hand. I will have to surprise hubby and make this today. He loves blueberries! This will be very good tonite after dinner with coffee. Thanks for this awsome recipie!
