Easy to do and very versatile. I did a much simpler
version of what Amy did. (see her recipe here)
Here's what I did...
1. I simply made scrambled eggs with sausage and cheese.

4. Wrapped them in a paper towel and then
in a piece of foil. I then put them in a ziploc bag
and stuck them in the freezer.
In the morning, I pulled 1 out. Took off the foil and
defrosted/cooked it in the microwave.

For the whole batch
(it made 8 burritos, with a few eggs left over)
I used 13 eggs
1 cup cheese
1/2 lb sausage
and 1 package tortilla shells
Not only did hubby like them but
several of the kids did too!

Why a paper towel???
I didn't even question it Steph??? I assume it heats in the microwave better, maybe???
I went back to Amy's Finer Things site and no one mentioned it in the comments???
Maybe wrap them the first time and leave one without the paper towel and see if there's any difference!

I've done these too with variations and frozen them as well for my college kids who are always hungry! They typically skip breakfast or eat unhealthy stuff...so these are great for them too. I wrapped mine in saran wrap and stuck them in a ziplock bag. Pull one out, unwrap and place in a paper towel and micro for 2 minutes. I think the paper towel would be to absorb any moisture so the burrito isn't soggy. Makes sense to me anyway :)
