Weekly Groceries + HONEY!!

Another unimpressive week, I know!!!!

I even did something this week that I haven't done in
close to 2 years... I went to our little local grocery store.
Yikes I about jumped out of my pants at the prices!!!

But it was convenient to only get a few essentials.
Saved time and GAS!!


I spent $22.65
All 4 kids were with me and I caved into buying
donuts and apple juice. Now I know why
they never come with me!!! I used to buy these
donuts all the time and they remembered them so I
thought it would be a nice treat!!

Then I stopped in and bought 1 gallon of locally grown
honey from my SIL's uncle!!
$18.00
I'm attempting to switch all our sugar usage to honey.
I'm so curious how long 1 gallon will last...
More on our honey adventures later!!

btw--The honey is not really as dark as it looks in the picture.

February's almost over so here are our totals...
$145.74
Higher than I hoped but with the honey, I'm happy
with that total. It's still low and I saved almost $100. off
my normal monthly budget!

I'm making a little head way on my freezer, but I still

15 Ways to Keep Preschoolers Busy...


Reader Question--

What do you do with
toddlers/preschoolers all day?

(besides TV!!!)

Here is a few of my favorites!

1. BOOKS -- I know nothing new, but a big basket
of books goes a long way. Even if you're not there to
read them all the time, they sure do like looking at them!
2. Puzzles -- I had 2 kids that loved them and 2 that could
care less. My 4th will sit and do them for a long time!

3. Tupperware -- I know an odd one. Give a child tons
of bowls, butter tubs, lids and they'll love it. Add something
they can put in take out like matchbox cars or legos and you
have a fun and easy activity! If you're real brave and don't have
a headache, add a wooden spoon or two!

4. Paper, Cut Up Tissue Paper, and Glue-- Take
different colored tissue paper and cut it into shapes.
Set the pile beside them, give them a glue stick,
and watch them make a creation.
(they'll be so proud!)

5. Coloring -- Seems a no brainer! I loved the
Color Wonder marker sets. My son has graduated to washable
markers, although some days I wish I still had the color wonders.

6. Legos -- Again nothing new but they are something my kids
spend hours doing. When they're real young use the big blocks!
They just don't seem to out grow Legos!

7. Widgets -- This is something kids can start building with at
a very young age. They're easy to build with. It is also something
challenging for bigger kids when they try to match the cards!
(unfortunately not cheap but worth the money, IMO!!)


8. Play doh -- Some hate the clean up and I'm usually one
that cringes too (typically an outside only activity around here!).
But I've allowed my 3 yr. old to play several times inside this winter
and the clean up is actually very easy and doable.
(Just make sure it's NOT on carpet!)
If you worry about your little one eating it, try
this edible play doh recipe!

9. Pictures -- My toddlers always LOVED this. I had a basket
of misc. pictures that was theirs to look at. They were totally
extra so I didn't mind if they got a little bent or even ruined.
They love to look at themselves, mommy, daddy, aunts, uncles!
You get the idea!! Cost for 30-50 prints would be very cheap

10. Magnets on fridge -- Just make sure they don't put them in
their mouth. Magnets come in all shapes, sizes, and themes.

11. Foam shapes -- Make sure your little one is past the
stage of putting things in their mouth. Otherwise this is
very dangerous! Simply let them string the shapes.
I let them do this over and over. You can also
tie it for a wonderful necklace!!!
You can usually find a big tub of these in the craft section.

12. Games -- Some games are fun for younger children to play
by themselves. My son loves Blokus. He doesn't play the
right way, but loves putting all the shapes on the board.

13. Forts-- Build your little one an indoor fort and let them play, look
at their books, or color in it! It's easy to make this with a
table and a sheet!

14. Stickers -- Again assuming they won't put them in
their mouth. This can be costly if they go through them
like my son. It does however keep them very occupied!

2 Recipes to use Zucchini

I have tons of Zucchini from last summer still in my freezer.
Anyone else in this boat??

I shredded it with hopes to make zucchini bread.
I've done that a lot but Halee and I are the
only ones who enjoy it.

So I decided to find a few other recipes I could hide
zucchini in that everyone would enjoy!

Here's two that I found. (more to come)!

Chocolate Zucchini Muffins
original recipe here

3 eggs
2 cups white sugar
1 cup veg. oil (or 1/2 oil and 1/2 applesauce)
1/3 cup unsweetened cocoa powder
1 1/2 tsp. vanilla
2 cups grated zucchini
3 cups all purpose flour
1/2 tsp baking powder
1 tsp. baking soda
1 tsp salt
1/4 tsp ground cinnamon

Directions
Preheat oven to 350*. Lightly grease or line two 12 cup muffin pans.
In large bowl beat eggs. Beat in sugar and oil. Add cocoa,
vanilla, and zucchini. Stir well.
Stir in flour, baking soda, baking powder, salt, and cinnamon.
Mix until just moist.

Pour batter into prepared muffin pans, filling 2/3 full.
Bake at 350* for 20-25 minutes.
Makes aprox. 24 muffins.

I like to keep a few out and freeze the rest!
Halee eats these for breakfast ALOT!!


Chocolate Zucchini Cookies

original recipe here

1/2 cup butter (shortening)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla
2 1/4 cup all purpose flour
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp salt
2 cups zucchini

Directions
Preheat oven to 350*
In bowl, cream together butter, white sugar, and brown sugar
until smooth. Beat in eggs and vanilla.
Combine flour, cocoa, baking soda, and salt. gradually stir into
the creamed mixture. Fold in the grated zucchini.

Drop by spoonfuls onto cookie sheets. Bake for 8-10 minutes.
Allow cookies to cool 5 minutes on baking sheet before
removing to a wire rack.

I loved both of these recipes, especially the cookies!!
You couldn't tell at all that there was zucchini in the muffins,
but you could see it occasionally in the cookies.
This meant that hubby would eat the muffins but not the
cookies. My kids couldn't tell since they just wolf everything
down anyway!!! I'm assuming you could see it in the cookies because
are only baked for 8 minutes and the muffins bake for 20 minutes.

Let me know if you can think of another reason,
I'd love to not be able to see it in cookies too!

Meal Plan Monday



February is almost over... It flew by!! Which is good
since I'm itching for spring! The garden planning has
begun around our house!

We're still working on our freezer and pantry and
it looks like I'm going to continue it another month.
I'm thinking I'm going to make my budget for March
around $120. since that's what I spent in Jan. and what
it will be for Feb. too! That shaves $100. off my "normal"
grocery budget of $220. per month.

Here's our Meals for this week.

Monday -- beef enchiladas, applesauce, green beans

Tuesday -- Grilled Chicken, Twice baked potatoes, applesauce, corn

Wednesday -- BLT's with cheese and crackers

Thursday -- Spaghetti, cheesy bread (this bread has become a regular pasta side
at our house!), applesauce

Friday -- Dinner with family

Saturday -- Homemade Pizza (last week we got Pizza Hut with Book-its)

Sunday -- Meatballs with potatoes, and carrots (didn't have last week because
we went to my Mom's for Sunday Dinner!!)


I might not be around much today, we might venture up to Michigan and
look into getting a beehive! I'd love to switch from sugar to all honey. Having
our own bees would be a cheap way of doing that!! My Sil and Brother have been
so helpful - they're getting beehives too!! You can see a little about their beginning
bee journey here. I can't wait for honey!!

Anyone else a beekeeper for honey??
