Zucchini in excess!!! Freeze it!!

If you have a garden chances are you have excess zucchini.

Did you know you could just slice it up, blanch it and freeze it??
Then in the dead of winter when the snows a fallin' pull it
out and enjoy some garden zucchini!
Fried in a tiny bit of olive oil... Yum!!!

simple search for freezing zucchini.
I read that unblanched zucchini will last 4-6 months
while blanched will last 10-12.

Of course don't forget to shred some for the
WONDERFUL Zucchini bread.

Oh and don't forget to leave the peel on!!
It's got the good stuff!

Be careful to blanch it only a LITTLE. If you do it too much, you will end up with a mushy product when you thaw it.

you could also make zucchini relish!!! it is so yummy and a good way to get a lot of veggies in!! our recipe calls for carrots, red and yellow bell peppers, onions, and zucchini. there may be more that i forgot to mention but we love it! my zach eats the veggies by the spoonful as i make it. it is so much better than store bought and no additives!! it makes the best tartar sauce and salads(egg,tuna,chicken,etc.). just a thought!!!
