Weekly Menu

I won't be going to the store this week, but our menu doesn't look any different than normal. We'll see how we do!

Monday-- Mini Meatloaf, cheesy potatoes, and veggies
Tuesday -- Marinaded Grilled chicken, fettuccine noodles, and veggies
Wednesday -- Grilled sloppy dogs, macaroni salad, apple slices
Thursday -- Spaghetti Bake, cheesy bread, Mandarin oranges
Friday -- Birthday Party
Saturday -- Homemade pizza
Sunday -- Birthday Party

We're trying the mini meatloaves for our new recipe. I think it sounds interesting. I am still debating whether I should use oatmeal like the recipe says or substitute crackers like I usually use. Have you ever used oatmeal in meatloaf? How was it different? Should I try it??

I did my regular meatloaf recipe and just put them in cupcake pans. I DO use oatmeal but I'm sure using your regular recipe will be fine. You are just making the meatloaf in a smaller scale!

I enjoy your blog. I check it daily.

Like Sarah, I use oatmeal (always have). And I also use muffin pans when I want minis. Takes even less time than 45 min. (Learned this from Rachael Ray.)

My sil uses whatever she has on hand for the filler -- oatmeal, bread crumbs, cornflakes, crackers, etc. I don't think it affects the outcome at all.

I love your blog Megan. I just don't comment that much because I haven't joined the blogging world and I find it a pain to leave annonymous comments. Anyway, I tried the mini meatloaf idea and used my same recipe, but put cheese on top and put them in the muffin pan. It made a mess in my muffin pans and I did not enjoy cleaning it up! I liked the idea, but I don't think that it made my girls eat it any better (they usually eat meatloaf well without the "mini" aspect). So, I'm going back to the full loaf with one single large pan to clean out!

Thanks Abby, I didn't try the muffin pans cuz I didn't think I had time. I used a 9x13 pan and made 8 small loaves in it. Still 1easy pan to clean.
We like crackers instead of oatmeal but the oatmeal was still good. the small loaves was a nice change but not necessary I agree!!!

I think the cheese made it more rubbery, so I think I'll omit that in the future esp. since we couldn't taste it. Just one less ingredient!!

overall good meatloaf but hubby likes my normal recipe more!!
