Weekly Meals


I've decided to start posting my menu plans on Mondays with "Menu Plan Monday"! It's a really cool site with hundreds of links to menu plans! Check it out here...

Here's our plan this week...
Monday--Wet burrito Casserole (recipe below)
Tuesday--Herb baked tilapia, fried potatoes, and veggies
Wednesday--Ham steaks on bun with salad
Thursday--Chicken noodles with mashed potatoes (daughters birthday meal, her birthday is on Sat. She turns 8 yrs old)
Friday-- Birthday party!--Pizza Hut!!
Saturday--leftovers
Sunday--Pork Roast with potatoes and veggies

My new rule last week was to include at least 1 new recipe. This week I'm actually trying 2 new meals--Mon, and Tues. Hopefully this is not a mistake!!

Here is the recipe for the Wet Burrito Casserole (Monday).
1 cup sour cream
1 pkg taco seasoning
1 can mushroom soup
1 can mushrooms, diced
1 lb. hamburger
1 -16oz can refried beans
1 med onion--opt.
1 pkg soft taco shells
1 med pepper-opt.
2 cups shredded cheddar cheese

Mix sour cream and mushroom soup. Put half of mixture in bottom of 9x13 pan.

Fry hamburger, onion, and green pepper. Add mushrooms, taco seasoning, and beans to hamburger. Divide mixture onto tortilla shells. Roll up shells and place on top of sour cream mixture in pan. top with remaining soup mixture.

Bake 25 minutes at 350. Remove from oven and sprinkle the cheese on top. Return to oven and bake another 5-10 min. or until cheese is melted.

i try to change things up too, but the hubs likes the same ole. good luck with your new recipes and let us know how they turn out!

Oh man we just ate the wet burrito cass. it was really good! I think we will add it to our rotation!!

That recipe sounds familiar...Web Burritos, did you get that from the Family Cookbook??? I used to make that ALOT... it is DELICIOUS!
